Instructions

Special requirement: none

  1. Slice the onions into thin strips.
  2. Heat a large pot over medium heat and add a splash of oil.
  3. Add the sliced onions to the pot and sauté until caramelized, stirring occasionally. This will take about 30 minutes.
  4. Once the onions are caramelized, pour in the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for 15 minutes to allow the flavors to develop.
  5. While the soup is simmering, preheat the oven to 180°C (350°F).
  6. Cut the Gruyère cheese into thin slices.
  7. Ladle the soup into oven-safe bowls or crocks, and top each bowl with a few slices of Gruyère cheese.
  8. Place the bowls on a baking sheet and transfer to the preheated oven.
  9. Bake for about 10 minutes, or until the cheese is melted and bubbly.
  10. Remove the bowls from the oven and let them cool for a few minutes before serving.
  11. Garnish with additional caramelized onions, if desired.
  12. Serve hot and enjoy!
