Teriyaki Chicken
Instructions
Special requirement: none
- Start by preparing the teriyaki marinade. In a small bowl, combine soy sauce, sugar, and mirin. Mix well until the sugar is dissolved.
- Place the chicken thighs in a ziplock bag or a shallow dish. Pour the teriyaki marinade over the chicken, making sure it is evenly coated. Marinate in the refrigerator for at least 30 minutes, or overnight for extra flavor.
- Preheat the grill or a non-stick skillet over medium-high heat. If using a skillet, add a little oil to prevent sticking.
- Remove the chicken thighs from the marinade, shaking off any excess liquid. Reserve the marinade for later use.
- Grill or cook the chicken thighs for about 4-5 minutes per side, or until they are cooked through and the surface is nicely caramelized.
- While the chicken is cooking, transfer the reserved marinade to a small saucepan. Bring it to a boil over medium heat, then reduce the heat to low. Simmer for 5 minutes to thicken the sauce.
- Once the chicken thighs are cooked, remove them from the heat and let them rest for a few minutes. This will allow the juices to redistribute and make the chicken more tender.
- Serve the teriyaki chicken hot, drizzled with the thickened teriyaki sauce. Garnish with sliced green onions or sesame seeds, if desired.
